Vegan Maple Coconut Milk Ice Cream

Ingredients
3 c. So Delicious Coconut Milk Beverage - Unsweetened1 c. canned lite coconut milk1/4 c. pure maple syrup1.5 tsp NuNutrals white stevia (not pure stevia)1 tsp. maple extract1 tsp. caramel extract2 tbs. arrowroot starch
Directions
Whisk arrowroot into 2 oz. coconut milk beverage and set aside. Put remaining items, excluding extracts, into a large saucepan. Heat over medium heat - as soon as liquid beings to gently boil, remove from heat and whisk in arrowroot slurry.

Chill in fridge until totally cooled - overnight is great. Mix in extracts and process per your ice cream machine's instructions. Makes about a quart.
