Cabbage Vegetable Soup

Ingredients
Cabbage, fresh, 2 cup, chopped Crushed Tomatoes, 794 grams Carrots, raw, .5 cup, chopped Celery, raw, 2 stalk, large (11"-12" long) Spinach, fresh, 2 cup Chicken Broth, 4 cup (8 fl oz) Water, tap, 2 cup (8 fl oz) Garlic, .5 clove Garlic powder, 1 tbsp Salt, 2 tsp Pepper, black, 1 tsp Portabella Mushrooms, 57 grams Onions, raw, .75 cup, chopped *Extra Virgin Olive Oil, 1 tbsp
Directions
Chop all vegetables. Saute onion in olive oil for 2 minutes, until soft. Add carrots and celery. Sauted for additional 2-4 minutes. Add chicken broth and scrape bottom of pot. Add remaining vegetables, water and crushed tomatoes and bring to a boil. Lower heat and simmer for 1-2 hours.
