Creamy Potato & Cauliflower Soup

1 Cornish Hen6 cups filtered water4 cups of raw potato diced1 cup celery chopped1 cup sweet onion diced1 cup carrots diced4 cups cauliflower broken into small floretsSalt & Pepper to taste
Cover thawed Cornish hen with filtered water and bring to a rapid boil, simmer for 30 minutes. Remove hen from broth, and debone meat and remove skin. Add the remaining ingredients to chicken broth and cook until tender (about 20 minutes). Remove vegetables from broth and puree in blender. Add small portions of broth to puree mixture to make consistency desired. Serve steaming hot with shredded chicken on top of creamy soup. May top with cheese if desired.
