Honey Dijon Grilled Shrimp Skewers

Ingredients
1 lb of extra large raw shrimp peeled and deveined1 pint of cherry tomatoes1 tbsp melted butter3 tbsp dijon mustard1 tbsp honey2 tbsp water
Directions
1. Presoak 8 bamboo skewers in water for 20 minutes.
2. thread the shrimp and tomatoes alternately onto skewers starting and ending with tomato. In a small bowl mix together the butter (melted), dijon and water. Set aside.
3. Heat grill until hot. Goat grill with cooking spray and heat on med high. Lay skewers on to the grill. Cook for 1 - 2 minutes or until turns pink. Flip and brush cooked side with sauce. cook for additional 2 minutes or until cooked through. Brush remaining sauce on to freshly cooked side and serve.
