Peanut Butter Chicken

Ingredients
Non-stick spray3 boneless, skinless chicken breasts (cooked & cubed)2 cups fat free chicken broth4 tbsp liquid honey2 tbsp soya sauce2 table spoons cornstarch1/2 cup light, smooth peanut butter1 chopped green onion1/2 cup chopped red pepper1 package linguine egg noodles (not included in nutritional information)chopped peanuts (optional)chopped green onion (optional)
Directions
Spray pan with non-stick spray, add cubed chicken and cook through. Set aside.

In a small saucepan, combine chicken stock, honey, soya sauce and then whisk in peanut butter and cornstarch. Cook until thickened. Add 1 chopped green onion, red pepper and chicken and heat.

Cook linguine according to directions. Serve sauce over noodles. Option: Sprinkle with chopped peanuts and green onion.

    This was incredibly unexpected. I'm not sure what I was thinking a peanut butter sauce would taste like, but this wasn't it. Fairly good. There was a -lot- of sauce though, will remember to cut it down if I make it again. - 3/17/11
