Wild Rice Soup : 4 Servings

Ingredients
1 c. wild rice, raw (or 2 c. cooked)1 T. olive oil3 green onions, chopped1 clove garlic, minced1/3 c. flour4 c. chicken bouillon1/2 c. ham, cooked and cubed1 carrot, finely grated3 T. pecans or walnuts, chopped1/4 t. pepper1 c. half & half, fat free4 T. parmesan cheeseparsley (optional garnish)
Directions
1. Cook rice according to package directions. Can be stored in refrigerator until ready to use, or proceed directly to step 2.

2. Saute onions and garlic in oil. Blend in flour and gradually add broth. Cook, stirring constantly until it comes to a boil. Boil 1 minute.

3. Stir in ham, wild rice, carrots, pecans and pepper. Simmer 5 minutes.

4. Blend in half and half. Heat to serving temperature.

Top each bowl with 1 T. freshly grated parmesan cheese and parsley.

4 hearty servings.

    I made this reciepe for my family and tweeked it slightly. I used Chicken instead of Ham and did not add the nuts. It was VERY good. The whole family loved it and asked me to make it again!!!!! - 3/26/11
