Quick Creamy Tomato Soup

1 Medium Onion 2 Garlic Cloves crushed 1 tsp coconut oil2 cans of diced tomatoes1 cup of broth (your preference, I use organic beef broth)1 tsp olive oil1/2 Tbsp dried basil (or fresh if you have it)salt to taste pepper if desired (I leave this out)1/2 cup low fat goat's milk (or cow's milk if desired)
1) Chop the onion
2) Saute onions and crushed garlic in 1 tsp coconut oil until golden brown in a medium to large pan
3) add 2 cans of tomatoes, broth, olive oil and basil (salt and pepper to taste). Bring to a boil and simmer for 5 minutes
4) Blend in a food processor or blender, or use an immersion blender.
5) Add milk, stir and enjoy.
