Lydia's Gluten-Free Pizza Dough

1 cup warm water1 package dry, active yeast1 TBSP sugar2 TBSP olive oil1 tsp each: basil, oregano, rosemary, and crushed red pepper1/2 TBSP apple cider vinegar1 tsp salt1 tsp xanthan gum2.5 cups gluten-free flour1 TBSP olive oil for pan1/8 cup cornmeal for pan
Proof water, yeast and sugar.
Whisk together 2 TBSP olive oil, herbs, vinegar, salt and xanthan.
Whisk in yeast mixture.
Add flour.
Mix by hand for 3 minutes. Leave to rest while you oil the pan and sprinkle cornmeal.
With oily or wet hands, spread dough out on cookie sheet. It should come close to the edges.
Let it rest in a warm place while you preheat oven to 425 F.
Prebake 10 minutes.
Add sauce and toppings. (Not included in this recipe!)
Bake another 10 minutes or until toppings are bubbly.
Cut into 8 pieces.
Serving Size: Makes 8 squares.
