Crockpot Vegetable Vindaloo

Ingredients
6 cups mixed vegetables of your choice (I used okra, broccoli, carrots, and bell pepper)1 large onion, chopped4 cloves garlic, smashed1 can kidney beans, drained and rinsed1/2 cup Patak's Vindaloo paste1 cup chicken (or vegetable) broth
Directions
Combine curry paste and broth in a bowl and dissolve completely.

In a large crockpot, combine all ingredients.Turn on low for 4-6 hours.

Serve with basmati rice or naan.
