Ethiopian Cabbage Dish

Ingredients
Olive Oil, 1/2 cup Carrots, raw, 5 large slicedOnions, raw, 1 sliced, medium (1/8" thick) Cabbage, fresh, 1/2 head, large (about 7" dia) shreddedPotato, raw, 5 medium, slicedSeasalt 1/4 tsp, Cumin 1/2 tsp Ground tumeric, 1/4 tsp
Directions
Heat the olive oil in a large skillet over medium heat. Cook the carrots and onions in the hot oil about 5 minutes. Stir in the seasalt, cumin, tumeric and cabbage and cook another 15 to 20 minutes. Add the potatoes and cover. Reduce heat to medium-low and cook until potatoes are soft, about 20 to 30 minutes.

    I made today added 3 times the amt. of dry ingredients. Cooked in an enamel cast iron dutch oven on low heat added cabbage and potatoes at the same time cooked evenly. - 3/23/11
