Velveeta Cheesy Chicken Rotini

Chicken Breasts, no skin, 1 1/2 lb, cut into 1 inch piecesWater, tap, 2 to 3 cupsBarilla - whole grain rotini, 3 cup, uncookedKroger Frozen Mexican Style Vegetables (Broccoli, Corn, Red Pepper, Cauliflower) 16 oz packageRoTel Diced Tomatoes and Green Chilies (mild), 10 oz canVelveeta 2% Cheese, 8 ozCheddar Cheese, 1 cup, shredded
Cook chicken in large skillet sprayed with cooking spray on medium-high heat 5 min or until no longer pink
Stir in water. Bring to boil. Add pasta and stir.
Cover and simmer on medium-low for 10 min or until pasta is tender.
Add remaining ingredients and stir. Cook, covered 5 to 7 min. or until Velveeta is completely melted and vegetables are crisp-tender, stirring frequently.
Sprinkle shredded cheddar cheese on top and allow to melt for 1 or 2 min.
Serving Size: Makes (6) 1-1/2 cup servings
