Yellow Curry Tofu with Pineapple

Ingredients
1 package tofu, chopped into 1/2" cubes (approx. 2 cups)Cooking Spray1 jar Thai Kitchen 10-Minute Yellow Curry Sauce, (1.5 cup)Pineapple, fresh, 2 cup, diced2 yellow/summer squash, chopped (1 - 2 cups)2 medium Yellow Potatoes, chopped (1-2 cups)
Directions
Spray large saute pan with cooking oil.
Add tofu cubes. Cook on medium heat,turning occasionally until all sides are golden-brown.
Add remaining ingredients. Simmer until potatoes are tender (approx. 10-15 minutes)

Serve over your favorite whole grain rice!
