Herbed Chicken with Lemon Zest

Ingredients
chicken breast, deboned & skinned, 2 & 1/4#fresh parsley, 1/2 chopped finefresh thyme, 3 tsp, chopped finegarlic powder, 1 tspsalt, 1/2 tspblack pepper, fresh ground, 1/2 tspjuice yields of one lemon2 cups chicken brothcorn starch to thickenzest of one lemonflour, white, 1/3 cupegg whites, 2 large, slightly whippedoil olive spray
Directions
Coat non-stick pan with olive oil spray & heat on medium heat. Mix flour, parsley, thyme, garlic, the zest of one lemon, salt & pepper in a small bowl. Cut chicken into 1/2 inch slices, dip in beaten egg whites, & coat with flour mixture. Pan fry for 5-6 minutes each side, remove from pan. Set aside 1/4 cup chicken broth, mix cornstarch into this. In the same pan, heat remaining chicken broth & lemon juice to boiling, reduce heat, and mix in cornstarch until thickened. Return chicken to pan & stir. Serve over rice or noodles.
