Thai Chicken Slaw

Ingredients
Directions
2 small shallots, minced1 fresh jalepeno, de-seeded and minced2 T agave nectar (can sub honey)1/4 cup rice wine vinegarJuice of 1 lime (2 T)3 T fish sauce (Can use all soy if desired but will change flavor slightly)3 T soy sauce6oz Chicken Breast, grilled or poached, shredded1/4 large cabbage - about 4 cups shredded3/4 cup bell pepper, julienned1/2 cup carrot, grated3/4 cup cucumber, de-seeded and julienned2 T chopped Mint2 T chopped cilantro
Whisk together shallots, jalapeņo, agave, vinegar, fish sauce, soy sauce & lime juice. Set aside
Cook chicken - either grill or poach, set aside to cool and shred or slice thinly
Combine vegetables, dressing and chicken and toss together. Add cilantro & mint. Chill before serving.
