Spinach Barley Salad

1 TBS Dijon Mustard1 TBS finely chopped onion2 TBS Balsamic Vinegar3 TBS Olive OilSalt and Pepper to taste1/4 Cup Walnuts, chopped3 cups water 3/4 Cups Barley1.5 Cup Spinach1 shredded medium carrot1/4 Cup chopped Onion
1. Mix together mustard, finely chopped onion, vinegar, and olive oil, salt and pepper, set aside.
2. Boil water, add barley, Cook until the water is absorbed. (Adjust water amount to directions on package of barley).
3. Add all ingredients together to make salad.
It is best if you let it sit over night in the refrigerator, but it can also be eaten warm.
