2 C. Arrowhead Mills Organic Soy Flour2 tsp. Baking Powder1/4 tsp. Salt1/3 C. powdered xylitol4 Eggs1/2 C. Melted Butter4 Tbsp. Natures Hollow Sugar Free Preserves BlueberryCooking Spray
Preheat oven to 350* F. Coat a 12-muffin tin with cooking spray. Sift dry ingredients together in a large mixing bowl. In a small bowl, whisk together the eggs and water; stir in melted butter. Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix until combined. Fill muffin cups 2/3 full, and top each with 1 tsp. preserves; swirl preserves slightly with a toothpick. Bake for about 15 min or until a toothpick or tester comes away clean.
