Soy Flour Pancakes

Ingredients
1/4 cup Soy Flour (low fat preferred)2 large Eggs1/4 cup Egg White1/4 cup Cottage Cheese (1% fat preferred)1 tsp Vanilla Extract1 tsp Cinnamon, ground1/2 tsp Nutmeg, ground2 tbsp Butter (for frying the pancakes)
Directions
The batter:
1- whisk the eggs and egg white in a large bowl until you have a smooth bubbly mixture
2- add the vanilla extract, cinnamon and nutmeg and mix well
3- add the soy flour and whisk until you have a smooth mixture with no lumps
4- add the cottage cheese and mix well

Frying:
On medium heat warm a non-stick pan and add 1/2 tbsp butter and let it bubble, pour 1/4 of the mixture and let it cook until the edges starting turning a golden brown, flip and cook on the other side until it turns golden brown.
should make 4 pancakes, 2 per serving
