Chicken Tarragon Almond Salad

Ingredients
Chicken Breast, no skin, 24 ounces (remove)Cottage Cheese, 2% Milkfat, .5 cup (not packed) (remove)Yogurt, plain, low fat, .5 cup (8 fl oz) (remove)Shallots, 2 tbsp chopped (remove)Tarragon, fresh, 1-2 TbsAlmonds, 1 cup, sliced (remove)Lemon juice (1 tbs)Salt and Pepper to taste
Directions
Poach chicken, shred, let cool.

Blend yogurt and cottage cheese till smooth. Stir in chopped shallots, tarragon, salt, pepper, and lemon juice. Fold in chicken and almonds.
