Eggless Spinach Manicotti

*8 manicotti shells*1 (15-oz.) container light ricotta cheese*1 cup grated Parmesan cheese *1 (8-oz.) pkg. frozen chopped spinach, thawed and drained of excess moisture*1 tsp. salt*1 tsp. black pepper*1 tsp. dried basil*2 cups marinara sauce*1/4 cup Parmesan cheese
Preheat oven to 375
Boil manicotti shells per package instructions
While pasta cooks, mix cheeses, spinach, salt, pepper and basil. When manicotti are done, pat dry and fill with cheese mixture. Place in baking dish, cover with marinara (plus extra parm if desired) and bake for 30 min.
Serving Size: Makes 4 servings (2 manicotti per serving)
