Low Fat Oatmeal Raisin Cookies

1 cup whole wheat flour1-1/2 cups quick-cooking oats1/2 cup sugar1 tsp. baking soda1/4 cup prune puree (or a jar of prune baby food works great!!!!)1/4 cup plus 2 tbsp. of light pancake syrup, honey or molasses1 tsp. vanilla extract1/2 cup dark raisins1.2 cup chopped walnuts (optional- not calculated)
1. Preheat oven to 350. Combine flor, oats, sugar and baking soda, and stir to mix well. Add the prune puree, honey or molasses, and vanilla extract; stir to mix well. (If dough seems crumbly, keepstirring until it holds together). Stir in raisins and nuts if desired.
2. Coat a baking sheet in cooking spray. Droprounded teaspoonfuls of dough onto sheet, placing them 1-1/2 inches apart. Slightly flatten each cookie with the tip of a spoon.
3. Bake at 350 for about 9 minutes, or until golden brown. Cool the cookies in the pan. Serve. Store cookies in an airtight container in single layers seperated by waxed paper.

Great "diet" cookie! Tho I changed a few things..instead of prune puree, I used spiced apple butter. I used Splenda instead of sugar. I also added cinnamon and ground cloves. I will next time use dates instead of raisins.Changed quick oats to toasted, old fashioned oats. Great texture! - 11/4/09

i tried these with the suggested adjustments (omitted sugar, added egg, used honey and applesauce) and found them to be very bland...could be that i used unsweetened applesauce, but still. added 1/2 brown sugar and another egg and cooked a few minutes longer... THESE were more like cookies to me - 3/25/09
