Hearty Split Pea Soup ( Vegan Low Calorie Low Fat )

1 bag (2 cups) split peas, no presoaking necessary 4 cups vegetable broth 4 cups water 1 vegetable bullion cube 1 large potatoes, peeled and finely chopped 2 stalks celery, finely chopped 1 large carrot, finely chopped 1 large yellow onion, finely chopped 3 clove garlic, minced 1 leek 2 bay leaves A very small bunch parsley A few basil leaves basil
Chop everything up finely and put it all in a large pot.
Bring to a boil, then simmer for one hour.
Now mash with a potato masher or blend. (take out the bay leaves beforehand)
Add bay leaves back to soup and simmer very low for 30 - 60 more minutes.
Done!
Serving Size: Should make aprox 8 average bowls of soup

Threw everything into the slow cooker, and will let you know how it turns out! I like ham flavour, but I am vegan, so, I added smoked paprika and some pepper, and will fry up some vegan ham to sprinkle on top.
We loooooooved it!! The on,y changes I made were to add 1 tsp smoked paprika & curry powd - 11/11/14
