chicken Stew w/ peanut butter

Ingredients
1 lb boneless, skinless chicken breasts, cut into chunks3 cloves garlic, smashed1 large sweet onion, sliced2 large sweet potatoes, cut in chunks1 can chicken stock, low sodium1 can garbanzo beans (chic peas,drained and rinsed)1/2 cup all natural peanut butter1 tbs ground cumin1 tsp ground coriander1 tsp black pepper1 tsp red pepper flakes (more or less according to taste
Directions
In a large heavy pot, add chicken, and brown quickly (doesnt need to be cooked all the way thru

2. Remove chicken from pan.

3. Reduce heat to medium low, and add garlic, onion and potato to the pan; saute for 2 to 3 minutes.

4. Season with cumin, coriander, black pepper, red pepper watching carefully so that garlic doesn't brown.

5. Mix in broth and browned chicken, and any accumulated juices.

6; Cover pot and reduce to simmer for about 25 minutes

7. Add peanut butter and beans stirring thoroughly

8,. simmer about 15 minutes until chicken is cooke dthru and the taters are tender.

(note this recipe also works even better with boneless skinless chicken thighs, or with a whole chicken -- i don't like chickenw ith bones so i use boneless everything0

the smell is intoxicating ;0 and is even better the next day.

Iwill make this on a sunday, and u se it for lunch for the week...
