Lentil & rice cassarole

2 cups chicken broth1 can diced tomatoes, drainedminced garlic (put it as much as you like)Italian seasoning (same use as much as you want, I used 3tsp)3/4 cup of lentils1/4 cup brown rice (not instant)Shredded mozzarella or cheddar cheese3/4 cup onion chopped
Heat oven to 400 degrees.
In baking dish add all ingredients except cheese. Stir & Cover..
Put in oven for 50 minutes.
Take out (there will be a little liquid left on the top) and add cheese on top. I used about 1 cup.
Leave uncovered and cook for about 15 more minutes or until liquid is gone.
Take out and leave on counter for about 10 minutes.
Then enjoy!
