Steaklis Bourgignon

Textured Vegetable Protein (or seitan, tempeh, mushrooms, etc.) -- approx. 2-4 pieces per person6 medium size carrots sliced 1 big onion sliced 1 bottle of dry red wine (or 1-2 cup wine and 2 additional cups vegetable broth)1 cup vegetable broth 1 garlic clove 1 or 2 bay leaves1 Tbs flour or arrow root (to thicken broth)salt and pepper to taste
1. Combine steaklis, red wine and/or broth, and garlic in a large pot. If using other than TVP, saute before combining with wine, broth, and garlic.
2. Cover and simmer on low heat for about 30 minutes. Stealis should have doubled in size.
3. Take Steaklis out of broth and set aside.
4. Add carrots, onion, and bay leave to broth.
5. Bring to boil and let simmer for about 30 minutes, half covered so broth and wine evaporate a bit.
6. Add salt and pepper to taste.
7. There should be enough broth left to cover vegetables.
8. Add Steaklis to vegetables, simmer, lid on, for another 30 minutes.
9. Take steaklis out and place on serving plate.
10. Mix arrowroot or flour with 1 Tbs water.
11. Add to vegetables, stirring well over medium heat to thicken broth.
12. Pour over steaklis . Spinkle with parsley.
13. Serve with potatoes, rice or noddles.
