1 cup canned pumpkin1/2 cup Splenda1/4 cup 1% milk1/4 cup safflower oil1 egg1 3/4 cups whole wheat flour2 t. baking powder1 t. pumpkin pie spiceTopping:1/2 cup Splenda brown sugar blend1/2 cup rolled oats1/2 t. pumpkin pie spice
Combine first 4 ingredients and blend well.
Combine flour, baking powder and spice. Blend into pumpkin mixture.
Fill muffin cups 1/2 full. Combine topping ingredients and spoon 1T. over each muffin.
Bake at 375 for 20 mins.
