gluten free pancakes

Ingredients
soy milk-1 cuplarge egg-1whole wheat self -raising flour or gluten free self raising flour- 3/4 cupvanilla extract-1 tablespoonolive oil or olive oil spray -2 tablespoons.
Directions
1. crack the egg and add half the soy milk and whisk.
2. add half the gluten free either wholemeal self raising flour or gluten free white self raising flour.
3. whisk to beat lumps out. then add the reamining milk and flour and whisk again.
4. add the vanilla exract and mix.place in fridge for about 15 minutes.
5. heat a non stick pan with a little olive oil or olive oil spray. pour some batter into pan and cook.when bubbles appear, the flip over until golden brown on both sides.
serve with fresh strawberries, or honey or soy cream.any fresh fruit will do.
