Pumpkin Oatmeal Spice Muffins

1 cup oats1 cup nonfat milk1 cup whole wheat pastry flour1 tsp cinnamon1 tsp ground cloves1/4 tsp nutmeg1/4 tsp cloves1 tsp baking powder1/2 tsp baking soda1/4 tsp salt2 tbsp flax seed meal1 large egg, beaten1/2 cup canned pumpkin1/3 cup packed brown sugar2 tbsp canola oil
Bring milk to a simmer and mix with oats. Let sit for 10 minutes.
Meanwhile, sift flour, spices, baking soda, baking powder and salt together. Stir in flax seed. Grease a 12-cup muffin tin.
Mix egg, pumpkin and sugar into softened oatmeal. Mix gently with flour until just combined. Spoon into muffin tin.
Bake in a preheated 400 degree oven for 18-20 minutes until set and lightly browned.
