Turkey Breast with rice and tomatoes

Ingredients
4-4 oz Turkey Breast fillets or chops2 tbsp. canola oil1/4 cup chopped green pepper1/4 cup chopped onion1 cup long grain rice (not instant)1 (14.5 oz) can chicken broth1 (14.5 oz) can stewed tomatoes2 tsp sugar1/2 cup Parmesan cheese, grated
Directions
Preheat oven to 350 degrees. Heat oil in oven safe skillet. Add peppers, onions, and rice. Saute until veggies and rice are lightly browned. Add chicken broth, tomatoes, and sugar. Mix well. Top with 1/4 cup of the parmesan cheese and turkey breasts. Cover and bake for 45 minutes. Remove from oven, and stir the rice mixture around the turkey. Top with the remaining 1/4 cup of cheese and return to oven uncovered for 15 minutes. Serve immediately.
