Vegetable Quiche Cups, South Beach modified

Ingredients
5 egg whites + 1 whole egg1/3 cup fat free Half & Half1 package frozen spinach1/2 cup diced, each, green & red peppers, sweet onion 1/2 cup low fat shredded cheese2 splashes of Franks Hot Sauce Salt & Pepper
Directions
Mix vegetables and cheese together, then set aside. In a separate bowl, whisk eggs and half & half, hot sauce, salt & pepper together until frothy. Pour over vegetable and cheese mixture and stir until well incorporated. Spray muffin tin with cooking oil. Pour mixture in to top. Bake at 350° for 25 minutes. 8 servings per recipe.

    Are you supposed to thaw and drain the spinach first? These are also good with broccoli and ham :) - 7/14/10

    Oops! Left that step out! Yes, thaw and drain the spinach first. I usually thaw it overnight in the refrigerator.

    Fat free evaporated milk is a good substitute, too. I haven't tried skim milk yet, but I think it will lose some of it's richness.
