Rice a Roni Curry Salad

1 Box Chicken Flavored Rice a Roni2 6 oz jars of marinated artichoke hears1 green pepper4 green onions1 teaspoon curry powder2 tablespoons canola oil1/3 cup light mayonnaiseliquid from one jar of artichoke hearts
Saute rice in pan with oil and curry powder. Once browned, add seasoning and water per package instructions. Cook according to package. Once water is absorbed, set aside to cool. Chop green pepper, green onion, and artichoke hearts (reserve liquid from one jar or artichoke hearts) and add to rice mixture. In a small bowl, mix together reserved artichoke heart marinade and light mayo. Toss dressing with the rice and veggies, cover, and chill in refrigerator for at least an hour. Season to taste before serving.
