Vegan Indian Saag (spinach/tofu)

2pkg extra firm tofu3 pkg frozen chopped spinach-10 oz2 c fresh spinach4-6 cloves garlic3 TBS minced or grated ginger1.5 c tomato sauce1 TBS coconut oil1 cup almond milk 1 TBS garam masala1 TBS ground coriander1 TBS cumin1 tsp sea salt1/8 tsp cayennetamari
drain tofu for 20 min
cut in 1 " cubes and sprinkle with Tamari
broil at 425 for 45 minutes shaking every 10-12 min.
remove and set aside
heat oil in lg pan and add garlic and ginger, stir a lot
add tomato sauce and spices
add thawed spinach and cook until hot, then add fresh
blend in vitamix until texture wanted'
simmer 8-10 min until desired green color
stir in almond milk
add tofu
