Meatloaf with Oatmeal

Ingredients
1 lb. lean ground sirloin1 c. onion, chopped4 c. fresh spinach, chopped1/4 c. Old Fashioned Quaker Oats2 T dijon mustard1/4 c. liquid egg substitute1/4 c. Heinz One Carb Reduced Sugar Tomato Ketchupsalt and pepper
Directions
Heat oven to 400° F. In a bowl, combine the ground sirloin, onion, spinach, parsley, oatmeal, mustard, egg white, and ½ teaspoon each salt and pepper.

Transfer the mixture to a baking sheet and form it into a 10-inch loaf. Spread with the ketchup. Bake until cooked through, 45 to 50 minutes.

Top with more reduced sugar ketchup or warm marinara sauce (optional).

    Was rather onion-y, but the kids ate it. They weren't thrilled about the spinach in there but if I'd chopped it finer, may not have been an issue. Substituted "feldsalat" for spinach since my market here didn't have fresh spinach - 1/16/14
