Green "Enchilada" on Salad

Ingredients
1 Can of chunk chicken breast, 13 ounces, with juices1 can of mushroom slices, drained1 can of Old El Paso green enchilada sauce1/3 chopped green onions3 wedges of Laughing Cow Swiss cheese6 cups spring mix1/2 shredded cheddar jack cheesesalsa (optional)
Directions
Pour the first four ingredients into a sauce pan and simmer until bubbly. Turn heat down and add the 3 wedges of Laughing Cow cheese. Stir and press against the side of the pan until melted.

Pour 1 cup of the hot mixture over 2 cups of spring mix salad. Top with 1-2 Tbsp of shredded cheese and salsa if you wish.

Add ins- for much crunch and texture, add sliced cucumbers and diced tomatoes.

Serving Size: makes about 3 cups of creamy chicken enchilada sauce
