Moosewood Polenta with Greens and Eggs

2 1/2 cups water3/4 cup polenta (cornmeal)1 Tbsp oil 3 garlic cloves, minced1/8 tsp crushed red pepper1 bunch collard greens (or any other fresh greens such as swiss chard, mustard greens, or spinach)2 tsp balsamic vinegar4 eggs
Bring the water to a boil in a medium saucepan. Slowly whisk the cornmeal into the water, reduce heat to low, and cook while whisking frequently until the polenta is thick and creamy (about 10 min).
For the greens, heat 1 Tbsp oil over medium heat in a large skillet. Add the garlic and red pepper, and saute for a minute until garlic is fragrant. Then add greens, cover, and cook until it wilts (about 3 min).
Just before serving, heat large nonstick skillet over medium heat. Add eggs and cook desired firmness.
Serve a 1/4 polenta topped with greens and an egg.
Top with grated cheddar or parmesan, if desired.
