Curried Tilapia Rice Pilaf

Ingredients
4 tbsp olive oil, divided1/2 tsp salt1/4 tsp pepper4 (6oz) tilapia fillets1 small onion, chopped1 red bell pepper, finely chopped1 green bell pepper, finely chopped2 tbsp minced fresh ginger1 tbsp curry powder1 (14.5 oz.) can diced tomatoesCooked white rice
Directions
Coat grill rack with nonstick cooking spray.
Preheat grill.
Combine 2 tbsp olive oil, salt and pepper in small bowl. Drizzle over fish.
Cover and chill 30 minutes.
Grill fish 5 to 7 minutes or until fish flakes with fork.
Heat remaining 2 tablespoons oil in large saute' pan over medium heat.
Add onion and saute'; add peppers and cook 5 minutes or until vegetables are tender.
Stir in ginger, curry powder and diced tomatoes; simmer 15 minutes.
Add fish and cook 5 minutes more.
Serve over hot cooked rice.
