Spiced Lentils w Spinach

Ingredients
wash the dhal in cold water several times. Add dhal with the 2:1 water to dhal ratio in a sauce pan - bring to a boil, reduce to simmer and cook about 30 minutes covered. Remove cover and let dhal cook until water evaporates.Add oil to a wok or large pan with BLACK mustard seeds - heat until mustard seeds pop; add onion sliced thinly, garlic, chile and ginger - cook for 6 minutes or so then add spinach (thawed and drained) - cook for 10 minutes until liquid is absorbed. Add spices and salt and cook for 3 minutes more. Add chana dhal and cook for 5 or more minutes.
