chicken pinapple quesadilla

Ingredients
2 chicken breasts, diced1 small can pineapple tidbits1 large red pepper diced1 cup of pineapple juicered pepper flakes, salt, pepper as neededTortilla shells (2 each)cheese of choice
Directions
cook diced chicken, pineapple, and peppers in a frying pan (no oil or butter) with red pepper flakes,salt and pepper for about 5 minutes stirring constantly over medium heat.
add pineapple juice, bring to a boil. turn heat to a 1 or 2 and let simmer stirring occasionally until all the pineapple juice is cooked off.

if you have a quesadilla maker the next step is super easy. If not...spray a tortilla shell with nonstick spray place in heated pan, put cheese around it and then the chicken mixture made earlier. place another shell on top and spray it. use another pan to push down on it. After about 2 minutes flip it and cook for another 2 minutes.
