Zero Point Soup

Ingredients
1 T olive oil1 onion3 stalks celery4 cups chicken broth1 can diced tomatoes1.5 cup shredded carrots2 cups shredded yellow squash1.5 cup chopped broccoli2 cups chopped cabbageany other veggies you wantwaterseasoning of choice- salt, pepper, bay leaves, basil, parsley, etc.
Directions
Chop onion and celery and brown in olive oil. Add chicken broth. Chop all other veggies and add to pot. Add seasonings and extra water if desired. Simmer about an hour. Servings are 1 cup.

Can serve with rolls, add chicken to it, top with parmesan cheese, whatever you want.
