Baked Acorn Squash with Apples

Ingredients
Directions
1 acorn squash2 apples, chopped1/4 cup brown sugar1 tablespoon margarine, melted
Preheat oven to 350 deg F and either grease a cookie pan or cover it with tin foil.
Mix together the chopped apples, brown sugar, and melted margarine. Set aside.
Cut the squash in half and scoop out the seeds. Place the squash cut side down on the prepared pan and bake for 25 minutes.
Turn squash right side up and fill each half with apple mixture. Bake for another 20 minutes, or until the squash is tender.
For extra flavor, add 1/4 cup chopped walnuts to apple mixture (nutritional info does not include walnuts).

Great recipe! I only used 1 apple and 2T Splenda brown sugar blend and 1T Land O'Lakes light butter. It knocked the calorie count down but it's still great. I also was in at ime pinch so I microwaved the squash for 4 minutes and then added the apples and microwaved for another 4. Really great! - 9/16/08

This is terrific! I was in a hurry, so I microwaved the squash for 7 minutes, then baked it in the oven with the apples for 30 minutes. I also added some spice to the apple mixture. If fat and calories weren't an issue I'd double the sugar and butter, but it's really sweet enough as is! - 10/27/09

I just cooked this tonight. Microwaved the squash 7 minutes per the comments above, and baked with the mixture in them for 40 minutes, and the squash needed all of that. Added 1 tablespoon of cinnamon and a couple tablespoons of finely grated walnuts to the mixture. Diced apples fine. Fabulous! - 2/8/10

I've never had acorn squash before, but really enjoyed this dish. I made it as my contribution to a dinner party and everyone said it was one of the best acorn squash recipes they'd tasted. It's easy to make and doesn't take too much prep time at all. I can't wait to try it again! - 2/22/10
