Baked Herb Red Potatoes

4 medium red potatoes1 tablespoon extra-virgin oilive oil2 teaspoons dried italian seasoning1/2 teaspoon kosher salt1 teaspoon smoked paprika
Preheat oven to 450 degrees F. Cut potatoes into fourths lengthwise. Then cut into 1 inch bites. Place on baking sheet and drizzle with the olive oil, then sprinkle remaining ingredients on top of potatoes. Toss to combine and spread out evenly on baking sheet.
Bake for 20 minutes, stir half way through and enjoy.
Serving Size: makes about 4 3/4-cup servings, depending on size of potatoes.
