Food & Wine Pasta with Chicken and Brussels Sprouts

Ingredients
Olive oil cooking spray6 oz chicken breast, no skin1/2 cup chopped red onions2 tsp garlic, crushed1 cup Brussels sprouts, quartered length-wise1 cup mushrooms, sliced1 Tbsp crushed red pepper flakes1/4 tsp fresh ground black pepper3/4 Tbsp lemon juice2 Tbsp parsley2 cups cooked whole wheat penne or other pasta
Directions
Heat large nonstick frying pan and spray with olive oil cooking spray. Cook the breasts until browned and just done, 4 to 5 minutes per side. Remove the chicken from the pan and let it rest for 5 minutes. Cut into small pieces.

Heat the same pan and add cooking spray. Add the red onion and cook, stirring occasionally, until starting to soften, about 3 minutes. Stir in the garlic, Brussels sprouts, mushrooms, broth, and red-pepper flakes. Bring to a simmer and cook, covered, until the Brussels sprouts are just done, about 5 minutes. Add the chicken, lemon juice, parsley and black pepper. Remove from the heat.

Serve over prepared pasta w/ nice green salad and white wine.

Serving Size: makes 2 bowls of pasta and chicken goodness
