Potatoes omlette

Ingredients
1 medium potato2 medium eggs35 grams feta cheese, lightparsley leaves (8 sprigs)salt and spices to taste1 TBSP olive oil
Directions
boil the potato till it soft then let it cool down and smash it lightly with a fork.
mix the feta cheese with the mashed potatoes
add the eggs, spices and parsley and mix very well.
brush a frying pan with 1/2 TBSP olive oil and cook just half the mix till it is golden or brown.
