Marcia's Oatmeal Whole Wheat Pancakes

Ingredients
1.5 c quick-cooking oats1 c low fat buttermilk1 c milk 1%1 c egg beaters2 tbsp canola oil1.5 c whole wheat flour.25 c packed brown sugar1 tsp salt - low sodium2 tsp baking powder2 tsp cinnamon1 tsp baking soda
Directions
In large mixing bowl, place oats, buttermilk, milk, eggs and oil; allow oats to sit in liquid mixture for approximately 15 minutes while you prepare dry ingredients in a seperate bowl. In second bowl, stir all remaining ingredients until evenly incorporated. After oatmeal is softened in liquid mixture, add dry ingredients to wet and stir with fork until evenly combined.

Heat non-stick griddle or large skillet over medium heat. Use cooking spray if desired. Use a 1/4 to 1/3 cup scoop to measure batter onto griddle. (I use a small gravy laddle) This creates exactly 18 pancakes. Turn when tops start to bubble and edges look cooked. Turn only one time.
