Libby's Low Carb Cabbage Rolls

Ingredients
1lb lean ground beef1 med cabbage, par boiled & seperated1/2c rice medley3c canned crushed tomatoes3c canned tomatoes/blended to make juicesalt & peppergarlic
Directions
* prepare cabbage
*mix tog beef, salt & pepper, 2 crushed & sliced
garlic, (small amt of cruched hot chillies-
optional) &1 1/2c of crushed tomatoes
*divide into 17 equal portions & roll in cabbage
leaves
*place into a pot, arranging in a tight fit
*Note: may add sausage or pork bone/ribs, or a
pork hock-remember to add in calories etc.
*slice (as for cold slaw) remaining cabbage &
place on top
*cover with remaing of tomatoes & juice, a bit of
salt & pepper & a clove of garlic
*cover, bring to a boil, reduce heat & cook at a
slow boil until done, about 1 hr
