1 small sweet potato6 tbsp Parmesan cheese1 tbsp mayo1 tsp Dijon mustard1 tsp garlic powder1 tsp black pepper1 cup skim milk1 tsp olive oil1/2 cup chopped onion1 cup frozen peas2 cups cooked brown rice1-7oz. can drained tuna (i use a 12oz can)
Preheat oven to 400
Cook sweet potato in microwave, mash well, set aside
In large bowl mix cheese, mayo, mustard, garlic powder, pepper, and milk. Add mashed potato and blend well.
Heat oil in small skillet. Saute onion about 2 minutes. Add peas. Add brown rice to reheat. Stir into sweet potato mix. Add tuna and mix.
Place everything in a 8x8 baking dish and bake 20 minutes.
