Palak Paneer

Ingredients
4 tbs oil2 cloves galic1 tablespoon gingerchili pepper paste (to taste)1/2 cup finely chopped onion2 tsp ground cumin1 tsp ground coriander1 tsp ground tumeric2 tbs veganaise8 cups spinach (torn)1/3 cup soy milk 1 large chopped tomato280 gm paneer (chopped into 1/2 in cubes)
Directions
in 2 tbs of oil,cook garlic, onion until brown. Mix in spices and veganaise. Add spinach a bit at a time until cooked down. (about 10 min).
Meanwhile saute paneer in remaining oil, until brown on all sides.
Pour spinach mixture into a food processor. Add soy milk and blend until pureed. Pour back into saucepan, add tomato and heat. Add browned paneer, mix and heat through.
Serve over brown basmati rice.
