2 leeks, thinly sliced4 ounces celery, chopped2 portabello mushrooms, diced1 medium onion, diced1 tbsp olive oil4 large tomatoes, chopped4 cloves garlic, diced1 can cannellini beans, rinsed1/2 cup uncooked orzo8 ounces cauliflower, cooked and processed/pureed
Saute onions, leeks, celery and mushrooms in olive oil. Add the rest of the veggies and simmer. Add beans and orzo 30 minutes prior to serving. Can simmer for a couple hours, adding water as needed. Makes 8 generous servings.
