Spanish Chicken Stir Fry

Ingredients
1 tsp Paprika1 tsp Minced Garlic1 tsp Thyme Leaves1/4 tsp Coarse Ground Black Pepper1 tsp Salt1/4 C flour1 Lb Boneless Skinless Chicken Breast cut into 1 " cubes2 Tbs Olive Oil1/2 Large Red Bell Pepper cut into thin strips1/2 Large yellow Bell Pepper cut into thin strips1/2 Large Red Onion cut into thin wedges1 can 14.5 oz Diced Tomatoes, undrained1/2 Cup water
Directions
Dice the chicken, set aside. Mix flour and all of the spices, dredge the chicken pieces in the flour. Cook chicken in hot oil in large skillet about 5 minutes, then add all of the vegetables and cook covered, stirring frequently, abt 5 minutes more. Add tomatoes and water. Cover and cook another 5 minutes. Remove lid and cook until liquid evaporates some and thickens. Serve over rice.
