La Bamba Casserole made with Beef and FF cheese

Ingredients
1 can fat free refried beans1 lb ground beef 93% lean1/2 cup onion1 pkg taco seasoning2 cups fat free shredded cheddar cheese4 slices fat free cheese1 cup brown rice cooked1 cup corn.5 cup green chilis coarsely chopped1 can rotel tomatoes
Directions
This recipe makes 2 casserole dishes 8x6 or one 9x13.
Spray pans with cooking spray, spread 1/2 the beans over the bottoms of the pans.

Brown beef with onion drain, add 1/2 the taco seasoning,and corn, set mixture aside.
Drain tomatoes and add to rice, mix in taco seasoning, place on top of beans, add 2 slices fat cheese on top of rice, pour beef mixture over cheese, place green chilis on top of beef add shredded cheese cover and bake at 350 for 30-45 minutes until heat through.
Serve with additional salsa and sour cream as desired.

    Very good, and filling. Did not have Ro-tel, so just used 7 oz green chilis and Tbsp tomato paste. - 5/18/14
