Simmer Me Chicken

Ingredients
1 1/2 lbs Chicken breasts or tenders1/2 tsp Pepper1tsp Parsley1tsp Oregano1/2 tsp Garlic powder1/4 Cup Lemon Juice1/4 Cup White cooking wine1 14oz Can Light & Fat Free Chicken Broth1 Small onion chopped1 Medium tomato chopped 1 Medium red pepper sliced or chopped1 medium green pepper sliced or chopped1 1/2 Cups brown rice
Directions
1.) Cook rice according to package.
2.) Spray a large skillet with cooking spray. Cook chicken until the edges start to turn white, then flip. 3.) Sprinkle with pepper, garlic, parsley and oregano, and cook for about 2 minutes.
4.) Place the onion and 1/2 of the tomato on top of the chicken and pour wine, broth and lemon juice over them.
5.) Simmer about 10 minutes, then add the rest of the veggies. Simmer about 10 minutes longer until the peppers are to your liking.
6.) Serve over rice and with a salad! Yummy!
